Overview
The inaugural South Bank Seafood Festival was created to celebrate Queensland’s thriving
seafood industry while showcasing the very best of Brisbane’s food, hospitality and
entertainment scene.
Working alongside South Bank Corporation from the earliest planning stages, SoldOut was
engaged as a Brisbane Event Management partner to develop and deliver the festival from
concept through to execution.
What began as a blank riverside lawn at River Quay was transformed into a vibrant
waterfront festival precinct featuring premium seafood experiences, chef masterclasses, live
entertainment, sponsor activations and curated hospitality moments. Over the course of the
weekend, more than 24,000 visitors attended the festival, enjoying a uniquely Brisbane
experience that celebrated local produce, culinary talent and community connection.
The Challange
As a first-year event, the South Bank Seafood Festival had no existing blueprint to follow.
South Bank Corporation engaged SoldOut as its Brisbane Event Agency partner to create
a destination event that would attract visitors, showcase Queensland seafood and establish
itself as a standout addition to Brisbane’s events calendar.
Every aspect of the festival needed to be built from the ground up. From concept
development and programming through to vendor recruitment, chef talent, sponsorship
integration, site design, infrastructure and operations, the event required a complete
end-to-end delivery strategy.
The challenge was not simply to deliver a food festival, but to create an experience that felt
established from day one while reflecting South Bank’s reputation as one of Brisbane’s
premier lifestyle, dining and entertainment destinations.
Our Approach
SoldOut worked closely with the South Bank Corporation team from the earliest concept
stages to develop the vision, programming and operational framework for the festival.
As specialists in community event management, the focus was on creating an experience
that would appeal to a broad audience while delivering memorable moments throughout the
precinct.
With a completely blank canvas, the team curated every element of the event experience.
This included recruiting seafood vendors and restaurant partners, securing sponsors,
sourcing culinary talent and developing a comprehensive two-day festival program designed
to keep visitors engaged from opening through to close.
The festival featured an impressive line-up of chefs, seafood experts and hospitality
professionals including Matt Moran, Shaun Presland, Gerald Ong, Narito Ishii and
representatives from some of Queensland’s leading seafood suppliers and hospitality
venues. Visitors enjoyed chef demonstrations, seafood masterclasses, wine pairing
experiences, oyster shucking stations and educational sessions that celebrated the journey
from ocean to plate.
To elevate the event beyond a traditional food festival, Sold Out introduced a range of
premium hospitality experiences throughout the precinct. Highlights included an exclusive
Otto pop-up serving Charles Heidsieck Champagne and caviar bumps, premium seafood
offerings, interactive culinary experiences and carefully curated food and beverage
partnerships.
The team also secured and integrated key event partners including Pepe Saya Butter,
Olsson’s Sea Salt and Moco Food Services, ensuring meaningful brand integration
throughout the festival experience.
Entertainment programming played an important role in creating a vibrant festival
atmosphere, with live bands, DJs and roaming entertainment helping transform the precinct
from a relaxed daytime dining destination into a lively evening waterfront experience.
Behind the scenes, Sold Out managed all aspects of planning and delivery including precinct
planning, site design, infrastructure, supplier coordination, logistics, operational planning and
on-site delivery. Through careful planning and collaboration, a blank riverside lawn was
transformed into a fully functioning festival precinct that felt both premium and welcoming for
attendees.
The Result
The inaugural South Bank Seafood Festival exceeded expectations, attracting more than 24,000 visitors across the weekend and establishing itself as a successful new addition to Brisbane’s events calendar.
The festival delivered a vibrant celebration of Queensland seafood, local hospitality,
entertainment and community, while activating one of Brisbane’s most iconic riverfront
locations
Through strategic planning, creative programming and expert Brisbane Event
Management, Sold Out helped transform an ambitious concept into a highly successful
destination event. The festival successfully brought together visitors, chefs, sponsors,
traders, producers and entertainers in a way that felt authentic to Brisbane and reflective of South Bank’s position as a premier cultural and lifestyle destination.
The event demonstrated the power of thoughtful community event management, creating meaningful connections between local businesses, hospitality operators, sponsors and the thousands of visitors who attended throughout the weekend.
